Gluten-Free Loaded Baked Potato Waffle Recipe

Today is Waffle Day. And while for most folks the crunchy, pocketed treat is something saved for breakfast or breakfast-dinners, the recipe below shows that a savory waffle is just as good as a sweet one.

 

Ingredients:

 

  • 5 slices thick cut bacon, cooked until crispy, crumbled
  • 2 cups prepared mashed potatoes
  • 2 large eggs
  • 1 cup milk
  • ⅓ cup white rice flour
  • ¼ cup potato starch
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • 2 tablespoons butter, melted
  • Shredded sharp cheddar (I used approx ½ cup)
