The French are known for many things and their mastery of chocolate is one of them.  Even though chocolate did not originate in France, French chocolatiers have a way with dark brown velvety substance that makes them stand out among the rest.

You can't talk about French food without discussing duck fat.  This flavorful fat is delicious with just about anything.  Duck fat fries are one of my favorite preparations but it is used extensively in traditional French cooking.  If you are going to indulge this holiday season, let it be with duck fat.
