Falafel, a traditional Middle Eastern chickpea fritter, is a popular meatless fast food meal that is served worldwide. Crispy and golden brown on the outside and soft and fluffy on the inside, falafel can be enjoyed on their own or stuffed into pita bread to create a vegetarian sandwich. I like to serve mine with shredded lettuce, chopped cucumber and tomato, tzatziki, and crumbled feta cheese. It is important to use dried chickpeas or garbanzo beans as opposed to canned ones because the texture is dramatically different. Canned chickpeas blend to easily (which is great for hummus) and you really want them to be crumbly. Dried chickpeas are available at most grocery stores or at your local Middle Eastern market.

1 cup dried garbanzo beans aka chickpeas
1/2 yellow onion, diced
4 cloves minced garlic
1/2 cup chopped Italian parsley
1 1/2 tsp salt, or to taste
1 tsp freshly ground black pepper
1 tsp cumin
1/2 tsp ground coriander
1/8 tsp cayenne pepper
1/4 tsp baking soda
1 rounded tablespoon flour
2 tsp lemon juice
