The trick is to substitute the heavy cream with chicken broth with a bit of low fat milk. This creates a lighter yet still flavorful sauce. It wouldn't be Fettuccine Alfredo without parmesan cheese so the most important ingredients isn't omitted. If you want to go healthier still, use whole wheat pasta and load up the sauce with vegetables like broccoli, spinach or cauliflower.

1 lb fettucini pasta
2 tablespoons olive oil
3 cloves garlic, chopped
2 tablespoons flour
1 cup chicken broth (you can also use vegetable broth to keep this vegetarian)
1 cup low fat milk
1 cup grated Parmesan
Salt and freshly ground pepper
Chopped, fresh parsley, to garnish (optional)
