Garlic Shrimp with Orange Arugula Salad


Garlic Shrimp
olive oil, 2 tablespoon
garlic cloves, sliced, 3-4 cloves
red chilli flakes, 1/2 teaspoon
shrimp, deveined and dried on paper towel, 10-12
salt, 1/4 teaspoon
Arugula Salad
arugula roquette, washed and dried, handful or 1 cup unpacked
cucumbers, sliced thinly, 1/2 of a cucumber
tomatoes, sliced lengthwise, 1/2 of a tomato
red onion, thin slices, 3-4 slices
orange, peeled and sectioned, 5-6 slices
pepitas, 1 teaspoon
lemon juice, 1 teaspoon
salt, 1/4 teaspoon
pepper, 1/4 teaspoon
olive oil, 1/2 teaspoon


Heat oil in a cast iron pan on a medium flame and add the garlic slices.
When the garlic sizzles, add shrimp and sprinkle some salt and red chilli flakes over it. Cook for a minute and flip over and sprinkle little bit of salt and red chilli flakes. Cook for another minute or two until you see light brown spots on either sides. Remove from flame.
Combine all the ingredients mentioned under Arugula Salad and toss well. Top it with garlic shrimp.
