Sunday Baking: Orange Molasses Bread

August 28, 2011

Baking on Sunday mornings is my thing, whether it's popovers, biscuits, or this rich orange molasses bread.  The orange ring and juice add sweetness to the bread while the molasses gives it depth of flavor and its beautiful brown color.  This quick bread only needs an hour to bake so it is perfect for a leisurely breakfast.  I like to eat this orange molasses bread simply with butter and orange marmalade.

Orange Molasses Bread

3/4 cup Sugar
1 teaspoon Soda
3 teaspoons Baking powder
2 teaspoons Salt
2 tablespoons Grated orange rind
3/4 cup Orange juice
3 tablespoons Melted shortening
Sif together flour, sugar, soda, baking powder, and salt. Add nuts. Combine evaporated milk, orange rind, orange juice, shortening, and molasses. Add to flour mixture all at once. Stir just to blend. Turn into a greased and wax-paper lined 9x5x3 loaf pan. Bake at 325 for one hour and 15 minutes.
