Buffalo Chicken Sliders

September 16, 2011

These buffalo chicken sliders are the perfect quick meal.  You can make them for a tailgating party, barbecue, or simply for dinner.  The spicy chicken pairs perfectly with the cooling slaw.  I like to add extra pickles and thin slices of red onion to my sliders.  If you are crunched for time, you can also make this recipe with a rotisserie chicken.  These buffalo chicken sliders are a party food that everyone will enjoy.

Buffalo Chicken Sliders

1 pound chicken breasts, cut into pieces big enough to fit on a slider bun
1 package rolls
Buffalo sauce (as much or as little as you like)
1 bag slaw mix
1 shallot, chopped
1 cup mayo
1 splash apple cider vinegar
Salt and Pepper
1/2 packet of dry ranch dressing powder
2 stalks of celery, diced
Heat grill to medium high heat. In a shallow dish, combine the chicken with the buffalo sauce – don’t be stingy with it if you like heat.
In a large mixing bowl, mix the slaw mix, mayo, vinegar, ranch powder, celery and shallots. Salt and pepper to taste; cover and refrigerate. Put the chicken on the grill, checking after a few minutes. Grill the chicken about 5-7 minutes on each side.
Carefully tear open the dinner rolls. Layer a chicken piece on the bottom, and top it off with a spoonful of slaw.
