Tagine refers to both a dish and cookware. The North African dish is a slow cooked stew that has some kind of protein, vegetables, and often dried fruit. The stew is almost always served with fluffy couscous. A tagine is also an earthenware pot with a funneled lid that allows the cook to lift the lid to add ingredients without burning themselves.
