DIY Curry Powder

Curry powder is not one spice but several spices blended together to make a spice mix.  Most jarred curry powders have been sitting on the supermarket shelves and have lost their intense flavor and fragrance.  The best curry powder you can have is the one you make yourself.  Purchase whole spices (from an Indian market, online, or other food's store) and toast them to release their oils.  Blend the whole spices in a coffee grinder (not in the same one that you use for your coffee) or mortar and pestle and store in an airtight container in a cool dark place.  DIY curry powder is guaranteed to be the best spice blend you've ever tasted.

DIY Curry Powder


1 1/2 tablespoons Ground coriander ( seeds)
2 teaspoons Turmeric
1 1/2 teaspoons Cumin seed
1 1/2 tablespoons whole Black Peppercorn
1 1/2 teaspoons crushed Red Chile
1/2 teaspoon Cardamom Seeds
1/2 teaspoon whole Cloves
1/4 teaspoon ground Ginger
Gather all of the whole spices and toast them over low heat in a small skillet. Shake the pan often to move the spices around and be sure they do not burn. Once they begin to smell nice and toasty, remove from heat and let cool a bit.
Transfer toasted spices and ground turmeric & ginger to spice grinder/small blender. Grind to a fine powder.
Store spice mixture in airtight container in cool dry place.
