Switching to a spring and summer menu involves lightening up recipes and including a lot more fruits and vegetables. Rachael Ray's favorite food for the summer months is oven-baked shrimp with mushy peas. "Mix peas with mint and parsley for that extra kick," Ray advised.
"Hot weather is also a good environment for burgers! And surf and turf dishes!" Ray added. "An easy marinade for seafood is just super fine salt, lime, and sugar."
