Irish Potato Pancakes

Celebrate St. Patrick's Day with one of Ireland's most important foods, the potato.  These delicious potato pancakes from Noshing with the Nolands highlights this Irish staple.  Buttery mashed potatoes are seasoned with garlic powder and fresh chives and formed into patties.  The potato pancakes are then pan fried until they turn golden brown.  You can serve this dish as an appetizer with a dollop of yogurt or nest to a slice of corned beef.  

  • 2 cups mashed potatoes
  • 1 egg
  • ¼ cup flour
  • Salt, pepper and powdered garlic to taste
  • Chives, optional
  • Canola oil for frying
