Pico de gallo is a fresh and easy Mexican salsa. Chunks of tomatoes are marinated in lime juice with onions, jalapenos and cilantro. This versatile salsa can be served atop tacos, inside burritos, or with fried eggs.
3 mediums tomato chopped
1 medium onions chopped
1 teaspoon jalapeno pepper finely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon canola oil
(or other vegetable oil)
Salt to taste
Freshly-ground black pepper to taste
In a small bowl, combine tomato, onions, jalapeno, cilantro, lime juice. Add salt to taste.
Onions will be "cooked" with the lime juice, so flavor is not that strong. Salt is important.
Refrigerate 12 hours for flavors to blend.
