Slow cooker spinach lasagna is an easy vegetarian meal. To create this Italian casserole, spinach is layered with ricotta cheese, marinara sauce and of course, noodles. You can add other vegetables to this dish to bump up the nutritional content. Mushrooms and winter squash would be especially delicious additions.
2 10 ounce packages chopped frozen spinach, thawed and squeezed to remove excess moisture
1 cup ricotta
3 cups marinara sauce
6 regular lasagna noodles (not no-boil)
