Vegetarian Mushroom Crepes with Garlic-Chive Sauce

This mushroom crepe recipe is vegetarian but can also be easily adapted for a vegan option! The creator provides two garlic-chive sauce recipes, so you can change according to your taste. Soft, delicate crepes are filled with mushrooms, fresh herbs and a splash of white wine.

Mushroom Crepes with Vegan or Vegetarian Sauce

200g whole wheat flour
250 ml water
2 eggs
Oil – for frying
300g mushrooms (Portobello, Champignons)
½ cup canned corn
1/2 cup chopped parsley
1/2 cup chopped dill
1/2 cup white wine
1 big onion, chopped
sea salt, to taste
1/3 tsp ground pepper
1/2 tsp ground coriander
1tsp sweet paprika
1 tsp garlic powder

Vegetarian sauce:
½ cup low fat sour cream
2-3 garlic cloves, mashed
a pinch of sea salt
1-2 tbsp chopped chives

Vegan sauce:
2-3 garlic cloves, mashed
2 tbsp water
a pinch of sea salt
1 tsp olive oil
4 tbsp tomato juice (or you can scoop out the inside of 1-2 soft tomatoes)
1-2 tsp chopped chives
