Dry-Rubbed Vegetarian Pulled “Pork” in BBQ Sauce

The jackfruit — a giant, sweet, avocado-looking fruit — can be used as a very believable meat substitute, as in this vegetarian pulled “pork” recipe from Forks Knives & Spades. The dry rub and accompanying BBQ sauce are quite spicy, pairing beautifully with tropical-tasting jackfruit.

Vegetarian Pulled Pork


1 T. vegetable oil
1/2 onion, diced
2 cloves garlic, minced
1/2 c. dry rub
2 c. ketchup
1/2 c. apple cider vinegar
1/4 c. molasses
1/2 t. liquid smoke
3 cans Jackfruit in brine or water, drained and rinsed
1/4 c. dry rub
