Meatless Monday: Sesame Kale Salad

This Asian inspired kale salad from Terra Americana is as healthy as it is tasty.  Kale leaves are chopped and steamed before being tossed with a sesame vinaigrette.  The recipe calls for ginger garlic salt which is a blend of minced garlic, ground ginger and kosher salt.  It can be purchased online or you can try making a variation yourself using the three ingredients.  You can serve this kale salad atop brown rice or with soba noodles.

Sesame Kale Salad

1 lb. fresh kale (or any other cooking green)
2 tbsp soy sauce
2 tbsp toasted sesame oil
1 tbsp toasted sesame seeds
1/2 tbsp Garlic Ginger Salt
2 tsp local honey or other sweetener
1 tbsp apple cider vinegar
Dash of black pepper/ground red pepper, or to taste
