Kimberly's Vegetable Gratin
2 medium zucchini, thinly sliced
2 large portabella caps, halved and sliced
3 small red potatoes, thinly sliced
1 small red onion, thinly sliced
4 plum tomatoes, sliced
3 cloves garlic, minced
2 1/2 teaspoons olive oil
1 cup finely crushed stuffing mix (such as Pepperidge Farm)
4 tablespoons butter, melted
1/2 cup grated parmesan cheese
Lightly coat a cookie sheet with cooking spray or olive oil.
Reduce oven temperature to 350 degrees.
Brush 11x 7 pan with 1/2 teaspoon of the olive oil, sprinkle with minced garlic.
Arrange tomatoes in a layer, then repeat with potatoes, onion, roasted red bell peppers, zucchini, and mushrooms.
Bake at 350 for 45 minutes.
Let sit for 15 minutes before serving.
