Fresh Corn Salsa
2 cups fresh corn kernels (or frozen, thawed)
1 jalapeno, seeded and finely chopped
1/3 cup chopped red onion
1/3 cup chopped fresh cilantro
2 tablespoons freshly squeezed lime juice
Salt and pepper, to taste
In a medium bowl, stir together corn, jalapeno, red onion, cilantro and lime juice. Season with salt and pepper, to taste. Refrigerate until serving.
