Kiwi Pear Chutney


1 1/2 cups brown sugar -- packed
1 1/2 cups cider vinegar
1 cup chopped onion
1 lime -- thinly sliced
4 lrg clv garlic -- chopped
1 1/2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon allspice
1/4 teaspoon crushed red chile pepper
2 tablespoons minced preserved ginger
1 cup raisins
1/2 cup chopped walnuts
4 cups kiwifruit peeled and chopped
4 cups pears peeled and chopped


Mix first 12 ingredients in a large heavy saucepan. Bring to a boil and simmer, uncovered, stirring frequently, for 30 minutes. Ladle into hot, sterilized half-pint jars and seal. Process in a boiling water bath for 15 mins. Cools and store in refrigerator after opening.
Makes about 6 jars.
NOTES: One of my coworkers has a large kiwi farm in northern San Diego county, and for several months in late fall and early winter, I am under extreme duress to come up with recipes using the furry little critters. This is one of those recipes
