Easy Weeknight Beef Stroganoff
1.25 lbs beef flank or sirloin steak – cut across the grain, thin sliced
1 medium onion
4 oz fresh mushrooms – sliced
1 ½ cup water
3 Cups egg noodles
8 oz. velveeta
1 can peas or 1 Cup of frozen peas
1 Can cream of mushroom soup
½ cup milk
½ tsp salt
½ tsp pepper
In a large skillet – brown the steak and onions on medium high x 4 minutes. Add mushrooms and cook for another 2-3 minutes.
Stir in water and bring to a boil. Add the noodles and bring to a boil again. Reduce to simmer and cook x 7 minutes until the noodles are done.
Add the other ingredients, simmer until velveeta is melted. Adjust salt and pepper to taste.
