Date-Nut Bread


cup chopped walnuts omit these for lower fat I used about ⅓ cup and that was more
than enough
cup chopped dates (¾ to 1) again ¾ was enough
1 teaspoon baking soda
1 cup sugar
1 tablespoon butter I used ICBINB light
cup flour
1 egg
1 teaspoon vanilla


Place nuts, dates, soda, sugar, and butter in a bowl. Pour boiling water over, and break apart dates if they are clumping. Add flour and mix, then egg and vanilla and mix well. Pour into large loaf pan and bake at 350 for50-60 minutes until a cake tester comes out clean. Cool and remove from pan.
Makes one large loaf.
This might make a nice replacement for fruit cake-type gifts. Great by itselfor with a touch of light cream cheese for breakfast or brunch.
NOTES : I made a date-nut bread last night, that was very scrumptious. I used theoriginal recipe, because I was hoping to duplicate my grandmother's richdark bread, but unfortunately, this recipe was not the same (but it waswonderful, just not the same). I will post the original, because if you omitthe nuts the original recipe probably falls well within the 30%% and you could probably cut the butter in half or omit it entirely.
