Fig Almond Salad


1 head of romaine lettuce
1/4 cup garlic infused olive oil
1/4 cup fig balsamic vinegar
Salt and pepper for seasoning
12 mission figs
4 green onions
1/4 cup slivered toasted almonds


Cut the lettuce into bite-sized pieces. Rinse and spin in a salad spinner to remove excess moisture and transfer to a salad bowl. Whisk the oil and vinegar together until blended. Pour half of the dressing over the lettuce. Season to taste with salt and pepper. Toss to combine.
Arrange the lettuce on 4 salad plates. Rinse the figs and pat dry. Trim the stems and cut into quarters arranging on the plates as ready. Rinse the green onions, trim the white portion, and discard. Cut the green part into 1 1/2 inch pieces scattering them over the salads. Top with almonds and pour the remaining dressing over the salads.


Figs are in season throughout the summer and fall. They are deliciously sweet all on their own and rich in health benefiting phyto-nutrients, anti-oxidants and vitamins. The almonds add crunch while the green onions add just the right flavor to balance out the salad. The simple dressing combines garlic infused olive oil and fig balsamic vinegar.
