Nasturtium Leaf Pesto
100g nasturtium leaves
3 large garlic cloves
70g Parmesan cheese
70g almonds – roughly chopped
160ml extra virgin olive oil
1. Simply blend all the ingredients together in a food processor until you get a thick paste! That’s it. Really easy.
I've had an abundance of nasturtium leaves this summer and the leaves make a wonderful pesto which is a lighter and less peppery version than watercress. If you have a food processor, it takes no longer than a few minutes to blitz this up.
