Orange Walnut Mandel Bread
3 eggs, beaten
1 cup sugar
1/4 pound butter, softened at room temperature
1 tsp. almond extract
1 tsp. vanilla extract
1 tsp orange zest
1 cup chopped walnuts
1/4 tsp. salt
1 tsp. baking powder
3 cups flour
Preheat oven to 350 degrees F.
In an electric mixer with the paddle attachment, cream together the eggs, sugar and butter on low. Stir in almond and vanilla extracts, orange zest and walnuts.
Sift salt, baking powder, and flour into a medium bowl, then slowly add to creamed mixture until combined.
Place dough in freezer for 30 minutes.
Remove from freezer; wet hands and form two loaves. Place on opposite sides of a cookie sheet with sides. Bake 30 minutes in 350 oven.
Remove and slice while still hot to prevent cracking. Sprinkle with cinnamon and sugar and place back on the cookie sheet. Bake for an additional 10-12 minutes or until golden.
