Tool: Duck Press


A duck press is used in French cuisine and used to make a dish called Pressed duck. To use a duck press take roasted duck remove the meat from the breast and legs. Place the remaining carcass into the duck press, and screw the metal disc down to squeeze out all the juices, fats and bone marrow. Add this to wine, butter and brandy to make a sauce in which the duck meat can be served.
